What To Bring To Thanksgiving Potluck

It’s that time of year again! The invites are rolling in. Friendsgiving, Thanksgiving … you name it, it’s happening. Today we’re chatting through what to bring to a Thanksgiving Potluck. If you love to cook, I apologize in advance for my antics. Cooking is just not something I enjoy. This post is for my people! The ones who avoid cooking at all costs, but when challenged to show up … we show out. I will admit there are only 1-2 dishes that I can make without fail. My list would be longer, but adding “baking frozen rolls” to my expertise just doesn’t feel right.

If you are headed to a Thanksgiving Potluck, this is part 1 of 2 of my go-to recipes that never disappoint. Please note, I am not the originator of any of these recipes. I searched for them on Google years ago and then perfected them through time.

First up, the Corn Casserole. Let’s get to it!

What To Bring To Thanksgiving Potluck: Corn Casserole

  • 1 (15 1/4-ounce) can whole kernel corn, drained
  • 1 (14 3/4-ounce) can cream-style corn
  • 1 (8-ounce) package corn muffin mix (recommended: Jiffy)
  • 1 cup sour cream
  • 1/2 stick butter, melted
  • 1 to 1 1/2 cups shredded Cheddar

Directions:

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter. Pour into a greased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with Cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted. Let stand for at least 5 minutes and then serve warm.

Stephanie’s Notes:

I have used this recipe for YEARS! My source is linked here (you know I didn’t come up with it!) A few modifications I’ve made include, doubling the recipe, but keeping the corn bread mix at the original amount. This keeps the dish creamy and not too cake-y. Another thing I do is instead of adding a layer of cheese on top, I stir it up. The cheese layer on top isn’t a favorite for my family, but to each their own.
